Crunchy, munchie and delicious!! This granola is everything you need in your life right now (no kidding)!! I have recently been struggling to find delicious and nutritious breakfasts that are quick and easy as well as not being lathered in sugar or having lots of artificial products in them. This granola is the answer!! I have been eating a scoop of this in the morning with some Greek yoghurt and fresh fruit and it is absolutely delicious!!
This granola can also have so many different flavour combos added to it. If you are a chocolate addict add a scoop of cocoa powder to it or even some peanut butter!! You could even put a bit of a savoury spin to it by adding some sweet potato or pumpkin purée, the variations are endless!!
1 1/2 cups of roughly chopped mixed nuts (I used almonds, cashews, macadamias, hazelnuts and walnuts)
1 cup of rice puffs
1/2 cup buckwheat
1/2 cup of rice bran
1/4 cup each of sunflower seeds and pepitas
3 tbsp coconut oil
2-3 tbsp rice malt syrup (optional, can sub honey)
2-3 tbsp rice malt syrup (optional, can sub honey)
2 tbsp chia seeds
1-2 tsp of cinnamon (to taste)
Preheat oven to 120 degrees Celsius.
Add all ingredients (except coconut oil) to a bowl and mix.
Melt coconut oil and pour into bowl with rice malt syrup or honey (if using) and mix again.
Lay granola on a baking tray and let roast in the oven for 25 mins, toss after 15 mins.
