Salsa 'Salsa'



This recipe has to be one of my favorite salsa recipes, I just love it!
It may not look to pleasing to the eye but trust me it is absolutely fantastic (especially made with your mums fresh home grown tomatoes.)

This recipe is jam-packed with goodness from all of the fresh wholesome ingredients in the salsa. Like tomatoes, chilli and coriander.It's great for putting on tacos or throwing in with some Greek yogurt and whole meal pasta for a quick easy meal.


This salsa keeps for quite a few weeks in the fridge. I tend to make a double batch and then freeze most of it in small containers and just keep getting them out when i need them.


Recipe//

Ingredients: 
1 tsp dried chilli
2 spring onions
1 1/2 large ripe tomatoes
1/2 bunch of fresh coriander
1 fresh red chilli
juice of a lime
2 tsp balsamic vinegar
1 tbsp low-salt soy sauce

Method:

Chop up all ingredients into cubes small enough to fit in your blender

Juice the lime

Add all ingredients into a blender and blitz until desired consistency is reached (I like to have a few tomato chunks in mine so I don't blitz for to long)
