Basic Biscuits



I made some little cookies today with a friend, they are very basic but also very moreish and delicious.

They are perfect for spreading jam or honey on or even just having with a cup of milk. The oats, almonds and coconut make it a very nutritious little snack. The recipe is very easily adapted so feel free to add some cinnamon, dark chocolate or dried fruit to suit your taste buds and trust me I won't be the one judging when there all gone that same day. 



These yummy biscuits could even be adapted as a slice base or tart base, there are just so many different ways you can use them. I have a recipe for chia jam that tastes absolutely delicious on them which will be up on the blog at a later date. Now for the recipe...




You Will Need:

1 1/2 cups of rolled oats
1/2 cup almonds
3/4 cup flaked coconut
2 1/2 tablespoons of oil (I used olive oil but coconut or macadamia oil would be nice as well)
2 tablespoons of honey
1 teaspoon of vanilla extract
3 tablespoons of water



1. Combine oats, coconut and almonds in a food processor and blend for about 10-20 seconds.


2. Add the oil, honey, vanilla essence and water and blend.Add more water if the mix is to dry


3. Form into flat balls and place on a lined baking tray. 


4. Place in the oven of 150 Degrees Celsius for 20 minutes or until golden and browned


5. Take out and eat them however you please.




This recipe has so many possibilities and is absolutely DELICIOUS!! Hope you like them.
