Raw Strawberry-Coco Slice



Strawberries, Coconut and Chocolate, these ingredients are the key to making the best healthy and nutritious slice ever.
The texture of the coconut with the sticky chocolate base and smooth strawberry topping all work perfectly with each other. If you are a fan of coconut ice, this recipe is definitely for you.

The strawberries combined with banana on the top of the slice make it high in vitamins and minerals. Coconut is also high in good fats that help with weight loss along with brain function. Oats are also proven to lower cholesterol (along with supplying a good amount of energy). Which means that this slice is great whenever you need a happy boost!!



Yes as hard as it is to wait for your slice to defrost from the freezer I definitely think you should, due to the texture of the whole slice being so much better once defrosted, rather than frozen. This slice is a rather thin slice as that is how I prefer them but if you would rather a thicker slice I would recommend doubling the recipe. Ingredients//

For the base:

1 cup of oats
15-20 dates (depending on size)
Heaped dessert spoon of cocoa powder
1 teaspoon of vanilla essence
1/3 cup of water

For the filling:

3 cups of desiccated or shredded coconut
1/2 cup water

For the topping:

1 banana (frozen or fresh)
2 cups of strawberries, can use alternative berries (frozen or fresh)



Start with the filling as it is the trickiest layer of this slice and requires a clean bowl to be able to have the best results. Add all coconut into a food processor and pulse until the mix is paste like and slightly moist (this may take a while depending on the processor you are using) if the mix has not gone paste like by 10-15 minutes of pulsing add a bit more coconut.

Add the water to the coconut until you are able to mould it (a bit like play-dough). Set aside.



Blend oats and cocoa in your processor until flour like and then drop dates in gradually until smooth. Add vanilla and progressively pour in water until mix is sticky and hard to get off your fingers. Press base into a 20 x 20 slice pan and spread filling on top.

Toss in banana and strawberries into processor and blend until smooth. Spread on top of slice.



Leave in the freezer to set for 2 hours and then slice, store in the freezer.
