Spinach and Tomato Puff Pastry Pizza



Spinach and Tomato Puff Pastry Pizza!! This little snack is super duper easy and so so delicious. Lunch, light dinner, parties or even as nibbles this pizza will fill that space.
Many ingredients in this pizza are really healthy and contrast perfectly with each other to make the perfect pizza.



The spinach is high in fibre and iron and the tomatoes are full of great vitamins. Feta and Parmesan cheese have a very low fat content which makes them a lot healthier than other regular cheeses, and in my opinion a lot tastier. This recipe is definitely worth making.



You Will Need//

250g of fresh or frozen, thawed spinach
2 sheets of puff pastry
1/3 cup of pesto
200g of feta cheese
1 handful of basil leaves
250g cherry tomatoes halved
1/4 cup Parmesan cheese
1 teaspoon cracked pepper

Method...

Preheat oven to 200 degrees fan forced. If using frozen, thawed spinach rinse and leave to drain.

Fold edges of puff pastry in 1cm on each side and spread the middle of the base with pesto.

Add chopped spinach, basil, cherry tomatoes, feta and Parmesan cheese on pastry and sprinkle with pepper.

Bake in the oven for 15 minutes or until golden and crisp.
