Chocolate Peanut-Butter Slice



Amazingly Yum!! Is all I can say about this dessert...actually there is a lot I could say about this delicious slice that is packed full of flavours, textures and YES! health benefits. I have become a little bit obsessed with the whole peanut butter thing and I think it may be catching on as I have shared this recipe with a few friends and they go NUTS for it!!


The best thing about this dessert is that it is pretty much guilt free. The good fats from the nuts and coconut as well as all the other great ingredients jam packed in there, make it not only tasty but healthy and nutritious as well. 

The fats in the coconut have been proven to help balance cholesterol levels and and improve blood circulation. Coconut also has anti-ageing properties and is great for your skin.



To add some more super powers to this already super slice feel free to add some cocoa nibs to the top to make the mousse choc-chip. Or even add some avocado in the filling to substitute for banana if you're not a big fan.



I love this dessert as a little 3 O'Clock pick-me-up or as an after dinner treat. I only need one little piece as it is pretty dense and rich and it takes me a while to eat as I am so busy indulging in the complex textures and flavours of the slice.



But, that's enough rambling. Lets get on with the recipe:



Ingredients:

For the Base:
1 cup of oats
1/2 cup of almonds or 1/4 cup of almond meal
15 dates or 1 table spoon of rice malt syrup.
2 Tbsp of cocoa powder
2 Tbsp of water

For the Filling:
1/4 cup of peanut butter
1 banana
2 Tbsp of milk
1/4 cup of desiccated coconut

For the Top:
200 ml coconut cream
2 Tbsp cocoa powder (add more if needed)

What to do??

Blend almonds to a powder if using. Otherwise add all base ingredients into a food processor and blend until combined. Add water gradually and more if mix is to dry. You want the mix to be nice and sticky.

Spread evenly on a 20x20 slice tin.

Rinse food processor to stop the mixing of layers.

Add all filling ingredients to the processor and blend until smooth. Spread onto base. Place into freezer whilst you prepare the top layer.

Rinse food processor again.

Add coconut cream and cocoa powder to processor and blend until cocoa powder is mixed evenly. Spread onto the top of your slice.

Leave to set in freezer for 2-4 hours then cut and store in the freezer. 

Leave the slice 10 minutes before eating so it can defrost. Slice will keep in freezer for 1 month.
