Tangled Thai Salad



If you are the sort of person who loves nutritious, yummy, colourful and good lookin' salads, then this recipe is certainly for you. I was in need of a good salad to make when friends come over that ACTUALLY fills you up! Because lets face it, its pretty hard these days to find salads that actually fill you up.



This salad is absolutely perfect for lunch or dinner. You could even make it in advance for the week to take to school or work. It is just so super easy! If you are planning on taking it throughout the week I would suggest packing the dressing in little separate containers to just 'grab and go' in the morning.



Lets just take a moment to cherish this dressing...(moment)...Yes it is that good!! Unlike the usual Thai style dressings that are made this one is not packed with sugar. Score!! and not only does it taste delicious it is also filled with healthy ingredients like garlic, chilli and lemon juice which help strengthen immunity, improve blood circulation and have anti-cancer compounds. So don't be afraid to lather your salad in this dressing!!



Dressing:
Juice of 3 lemons
2 teaspoons of crushed chilli
1 teaspoon of peanut butter
2 spring onions finely chopped
1 tbsp fish sauce
1 tbsp of rice wine vinegar
3 tbsp olive oil
3 cloves of crushed garlic

Salad:
¼ pack of rice noodles
Handful of green beans
1 carrot grated
1 cucumber grated
2 skinless chicken breast diced
¼ of a lettuce or cabbage shredded
Handful of cashews

Mix all dressing ingredients together in a container and let sit whilst you prepare the salad.

Place rice noodles in a bowl of lukewarm water to soak.

Dice up chicken and cook on high in a fry pan with a drizzle of olive oil.

Remove chicken from heat and let cool.

Grate carrot and cucumber and shred lettuce. Chop beans and cashews.

Drain rice noodles and toss in salad bowl with vegetables and chicken. Pour over dressing.
